Cheesy bread pakora / dipain frire fromage


Du pain frire or dipain frire, which translate to fried bread, is a classic Mauritian street food. While the original recipe consists of plain battered bread, we decided to go a step further and add cheese to this recipe! Trust us when we say it’s totally worth the calories!

  • 150 g plain flour
  • 250 ml water
  • 50 g grated cheese
  • 4 slices bread
  • 1 tbsp spring onion chopped
  • ½ tsp salt
  • yellow food colouring
  • oil to deep fry

Tomato and coriander chutney

  • 1 medium tomato
  • 4 sprigs coriander
  • 1–2 chillies
  • 1 tsp salt


  • In a large bowl, mix the plain flour, salt and spring onion.
  • Then pour in the water and whisk until a smooth batter is formed.
  • Add in a few drops of the yellow food colouring and whisk until well combined.
  • Get the bread ready by making a sandwich with the bread slices and the cheese in the middle. To secure the bread more, use some of the batter on the edges and press the bread to seal it more firmly.
  • In a medium-large pot, pour some oil to deep fry on medium-high heat.
  • Once the oil is hot enough, dip the bread into the batter mixture to cover both sides of the bread and gently place in the hot oil.
  • Deep fry the bread for around 5mins, and make sure to flip it a couple of times.
  • Take the bread out and let it cool down for a couple of minutes before serving!

Tomato and coriander chutney

  • Blend all ingredients together for a few seconds.
